Raajma Royale (Kidney Beans)


2 cup kidney beans
2 cup water
2 tbsp olive oil or vegetable oil
1/2 tsp red chili powder
1/2 tsp coriander powder
1 tsp turmeric powder
1/2 tsp garam masala (curry powder)
1 1/2 tsp salt
2 cup cut onion
1 cup sliced tomato

Optional Ingredients

1/2 inch ginger sliced thin or grated
3-4 coriander sprigs

Rinse kidney beans 3 to 4 times. Soak 'em overnight and retain the liquid. It contains essential nutrients which is nourishing. Boil happy fluffy kidneybeans in a dutch oven adding salt, turmeric and chili powder. Cook for 30 minutes on medium heat till the beans become soft. In a separate pan saute onions till golden brown then add tomatoes. Stir for a minute then add grated ginger. Add this to the kidney beans. Mash some of the cooked kidney beans in a bowl and put them back to thicken the soup. Garnish with coriander leaves.

Serving suggestion: Serve warm with paratha.

Serves four.

Tip: Black eyed peas, pinto beans, navy beans can also be cooked in this manner.
